Tow assist or advanced tow assist if you've got the tow pack fitted are selected from the cameras menu on the main screen or it'll pop up on the main screen when a trailer is attached to the towhook and connect the electrics. There's also a little trailer icon on the right side of the centre screen.
If tow assist or advanced tow assist is fitted, TSA (Trailer Stability Assist) will be included too.

Advanced tow assist is a bit more complicated since you select the desired reversing line on the main screen and steer using the TCR selector knob...using the cameras. It can be a bit counter intuitive if you're used to reversing a trailer as to get the purple trailer lines on the screen to go right, you turn the TCR knob to the right...like the park assist, you don't touch the steering wheel.
I've tried the advanced tow assist once or twice with my usual assortment of trailers and the livestock trailer/horsebox...like the park assist, it still freaks me out
You need to have a calibration sticker (3 circles thing) on the trailer/tin tent for it to work, I didn't have one but a mate did...so I scanned and printed a few off, plasti-coated them and leave a couple of them under the boot tray if I ever need them.
To be fair, as a farmer, I'm towing/reversing stuff with trailers day in and day out...from tractors with balers, tri-axle hoppers and the like to the Disco with a livestock or general use single or double axle trailers...I don't really need or use the tow assist. It's a very nice toy and fun to play around with...but a bit too much faffing about involved for it to be truly useful for me personally.
Then again, I'm not really the target audience for this type of feature
