Low engine coolant warning twice and then nothing.
Had the low engine coolant warning light yesterday twice, then nothing since, anything to be concerned about, how do we check thanks?

Open the bonnet and look at the coolant level when the engine is cold. Is it between the max and min marks? If not, top it up as necessary.

Should be fine.
Don't fill above the "maximum" mark on the tank. Then check frequently to make sure it's not going down quickly which would indicate a serious problem. Going down very slowly due to a little evaporation is quite normal.
